  1. Preheat oven to 475 degrees. Spray loaf pan with olive oil spray or wipe with oil, sprinkle with flour to coat, and set aside. In a large bowl, stir oats, flour, baking soda, and cinnamon together.
  2. Add applesauce, water, honey, and oil. Stir until well combined, then pour into prepared pan. Smooth top of batter so that it’s even. If desired, sprinkle salt and sugar on top.
  3. Bake for 30 to 35 minutes, checking at 30 minutes to see if it is done. (It will be browned on top, but not burned, and moist in the middle).

  1. Place all ingredients except Italian seasoning into a medium-sized pot on the stove. Heat on medium high, whisking until tomato paste is dissolved.
  2. Bring to a boil, reduce heat to medium low. Cover, and then simmer. After about 10 minutes of simmering, stir, and then check again after 15 minutes, stir, and reduce heat to low.
  3. After 20 minutes, stir, and check again. If the rice is cooked, remove from heat and fluff with a fork. If it is not cooked, cover and cook for five more minutes. After 25 minutes, stir and check again. If it is still not done, let it cook for five more minutes, and by 30 minutes, it should be done, with almost all the water absorbed into the rice. Remove from heat and fluff with a fork. Sprinkle with Italian seasoning and serve.

  1. Heat oil in 4-quart saucepan over medium heat until hot. Add onions and garlic. Cook until onions are tender.
  2. Add all other ingredients, mix well. Bring to a boil, stirring occasionally. Reduce heat and let simmer for 1 hour, stirring occasionally (simmer time varies based on number of tomatoes. Could take as many as 4-5 hours to get correct consistency).
  3. Ladle mixture into clean jars and cover with tight-fitting lids. Sauce can be refrigerated for up to 1 week or frozen for 3 months to 1 year.

*If you have extra green or red peppers on hand, you may add 1-2 for added flavor
*You may double or triple the recipe depending on the number of ripe tomatoes in your garden

  1. Add the quinoa/rice mix, water and salt to a medium sauce pan. Heat to a boil, reduce to simmer, cover for about 20 minutes.
  2. While the quinoa is cooking, cut up all of the veggies and place in a large mixing bowl
  3. In a smaller bowl or dressing container, mix in all of the dressing ingredients.
  4. When it has finished cooking, add the quinoa to the large mixing bowl and top with the dressing and feta cheese. Toss everything together.
  5. Serve and enjoy! Store in the refrigerator in a sealed container for up to a week.
Recipe Notes
  • Beans of Choice: You can’t go wrong here, so try your favorite bean. I like using chickpeas, lentils, kidney beans or black beans.
  • Quinoa: Don’t like quinoa? Swap in another grain like brown rice or couscous.
  • Vinegar: Don’t have rice vinegar or red wine vinegar on hand? Try apple cider vinegar, white vinegar or even balsamic vinegar.
